SPICY HOT CHICKEN SLICE





Materials and seasonings :

    
½ kg chicken breast
    
2 bay leaves
    
1 stalk lemongrass
    
1 cm galangal
    
½ tsp salt
    
1 tsp brown sugar
    
½ tsp roasted shrimp paste
    
1 tablespoon soy sauce
    
½ tsp chicken bouillon powder flavor
    
800 ml of water to boil
    
1 tbsp tamarind water
    
vegetable oil for frying and sauteing to taste
puree :

    
10 pieces of curly red chili
    
3 pieces of red chili
    
8 red onions
    
3 cloves of garlic
HOW TO MAKE :

    
Marinate the chicken meat that has been cleaned with lemon juice and salt to taste , let stand for 30 minutes then wash again .
    
Boil chicken in water until cooked , drain and after cold fried briefly in hot oil . Remove and drain the shredded - shredded chicken meat .
    
Heat oil , saute ground spices , lemongrass , bay leaves and galangal until fragrant and cooked . Add salt , pepper , brown sugar , shrimp paste and broth powder and mix well. Pour 100 ml of water , stir well and cook until boiling .
    
Enter the shredded chicken , stirring constantly fry until cooked and then lift and serve
