PEPES Salted Fish and Tofu





Ingredients and Seasonings:

     300 grams Wet Salted Fish , remove the head
     1 pieces large tofu, puree
     3 egg white grains
     1 handful basil leaves
     3 tablespoons lime juice / lemon
     2 stalks lemongrass, finely sliced
     6 bay leaves, sliced
     salt to taste
     sugar to taste
     banana leaves for wrapping

puree:

     10 grains of red onion
     8 cloves of garlic
     2 cm turmeric, grilled
     2 tsp shrimp paste, roasted
     4 pieces of red chili

KNOW HOW TO MAKE :

     Mix the wet anchovies, lemon juice / lemon until smooth, let stand for 10 minutes.
     Mix the wet anchovies, tofu, spices, egg whites, thyme, lemongrass, bay leaf, salt, and sugar. Stir well.
     Divide the dough into 20 parts.
     Take 1 piece of dough. Wrap with banana leaves as wraps rice cake, then pinned with a stick.
     Bake in oven / stove while inverted until cooked. Remove and serve
