SIMPLE CURRY GOAT




Ingredients and Seasonings:

     500 grams of mutton below the ribs, cut into pieces
     1 liter of coconut milk from 1 coconut
     4 cardamom pods
     5 grains of cloves
     2 cm cinnamon
     1 cm galangal
     1 stalk lemongrass, crushed
     1 bay leaf
     2 kaffir lime leaves
     2 tbsp fried shallots

puree:

     3 pieces of red chilli
     6 red onions
     2 cloves of garlic
     3 eggs hazelnut
     1 cm ginger
     1 cm turmeric
     1 tbsp coriander
     ¼ tsp cumin
     ¼ tsp fenugreek
     ¼ teaspoon nutmeg
     ¼ tsp fennel
     1 teaspoon sour Java
     1 tsp salt

HOW TO MAKE

     Heat 3 tablespoons oil, saute ground spices with other spices until fragrant and cooked. Enter the goat meat, stir and cook until it changes color.
     Pour the coconut milk and cook over low heat while stirring occasionally until the meat is tender and the sauce greasy. Remove and serve.
