GRILLED DUCK





Ingredients and Seasonings:

     1 whole duck, cut according to taste
     2 tablespoons lime juice
     1 liter of coconut milk from 1 coconut
     2 stalks lemongrass, crushed
     2 knuckles galangal, crushed
     2 tablespoons brown sugar
     2 tbsp tamarind water
     2 tablespoons cooking oil
     3 bay leaves
     5 pieces of orange leaves
     salt to taste

puree:

     16 grains of red onion
     8 cloves of garlic
     5 knuckle turmeric
     5 grains hazelnut
     1 tsp pepper granules

HOW TO MAKE A GRILLED DUCK:

     Marinate duck with lemon juice or vinegar and salt, let stand 30 minutes. Rinse and set aside.
     Heat oil, saute ground spices, lime leaves, bay leaves, galangal, tamarind water and lemongrass until fragrant.
     Enter the duck, cook until it changes color. Pour the coconut milk, add the brown sugar and salt, and cook until cooked duck and coconut milk is absorbed. Lift the duck grilled over coals while occasionally smeared seasoning until cooked, remove and serve.
